Goddard told me he was perfect during rehearsals but somehow always took a different tone while the cameras were rolling.

I'm confused as to why that would matter, surely he recorded the dialogue that's heard in the movie, long after the cameras had stopped rolling? (ADR)

Not all dialogues are re-recorded (except for some movies or big budgets), usually only lines for which the production sound wasn't good enough or that need optional deliveries. Given the issues the production had, I doubt there was time or money to ADR the entire movie.

I rarely see any movies that aren't clearly (and quite poorly) dubbed.

Are you telling me that most of the dialogue on MOTU was recorded LIVE?!

That surprises me.

Apart from the famous "giant evil lair" set there was quite little sound stage shooting and a lot of outdoors (night time) locations, right?

You know, now I'm confused... but I can tell so are the cast & crews I interview about something they did 25 years earlier sometimes...

But still, you usually try to get as much of the production sound the best possible so you don't have to loop the entire film all over and keep the actors initial performance from the set. And if the productio sound is good enough, the sound designers can do wonders mixing it with the rest of the music and effects so you couldn't tell if it's from the studio or not.
